8 Lg Ripe Lemons 2 Cups Sugar
2 Quarts Water
Peel the rinds from the lemons with a paring knife and cut them into ½" slices.
Set the lemons aside and place the rinds in a large mixing bowl. Sprinkle the sugar over rinds and let stand for one
hour allowing the sugar to soak up the lemon oil and create a syrup.
Bring 2 quarts of water to a boil. Carefully pour the hot water over the sugared lemon rinds and allow the mixture to
cool for 20 minutes.
While the mixture is cooling squeeze the lemons into a separate bowl, use a strainer to ensure that there are no
seeds in the juice. When the mixture is cooled remove the rinds with a slotted spoon and combine the lemon juice with
the water and sugar mixture.
Refrigerate and serve in a tall glass with lots of ice.
