Figgy Onion Burger
1 Lb Short Ribs        3 Lg Sweet Onions
1 Lb Sirloin Tips       2 Tbsps Fig Preserves
1 Lb Beef Brisket      3 tsp Olive oil

Begin by preheating a skillet over low heat. Julienne the onions. Add the olive oil to the pan and caramelize the
onions, stirring occasionally. This is a low and slow process that could take up to 30 minutes. Remove from the heat,
stir in the fig preserves and set aside.

While the onions are caramelizing, remove the short rib meat from the bone, then cube the short rib, sirloin tips and
brisket into 1” cubes and run through a meat grinder. If you do not have a meat grinder, pulse in the food processor
10 times. Blend the meats together, measure out 8 ounces and form into patties.  Season with salt and pepper.

Heat a cast iron skillet on medium-high heat. Sear the burger on each side creating a nice crust, flipping only once.  
For medium-rare burgers, cook the patties for 4 minutes on each side. For medium burgers, cook the patties for 5
minutes on each side. Remove the burgers from the heat and let rest for 4 minutes.  Top with figgy onions and serve
on toasted sesame seed bun.
